the ovens are on at five. sourdough, croissants, whatever the morning allows — one small batch of each.

by seven the counter is full. mornings are the golden hours here — the rest of the day is for lunch and coffee.

the kitchen runs till five: sandwiches on our own sourdough, a few thai plates we love, and coffee from first light onwards.

the sun, spelled out.

the hour

noon is the sun at its highest — the hour this place runs on. baked at dawn, busiest at midday, quiet by three.

the palindrome

noon reads the same in both directions. so does the building: arch, sun, arch. symmetry is the whole floor plan.

the thai bonus

say it out loud — “nuun”. thai for risen: full, proud, the shape of dough doing well. we didn’t plan that. we’re keeping it.
